Adzuki Bean Rice Cake

NOT a chocolate brownie. There ain’t a hint of cocoa here, nor does it taste like a wheat-flour cake.

Throw away all your preconceived ideas of what such a cake should taste like.

Imagine chewy, gooey, gelatinous. Fragrant rice. Lightly sweetened with honey.

Adzuki Bean Rice Cake

Combine well in a bowl

  • 150 g (1 1/3 cup) glutinous rice flour
  • 1/2 cup red bean paste
  • 1/3 cup honey
  • 160 mL milk
  • 1 egg
  • 1 tsp baking soda

Pour into greased pan and bake at 160*C for 40mins.
